Dairy free Chocolate cake with chocolate frosting made with       Cashew Brownie Bake mix!

 

Preheat oven to 350.  Grease or line an 8x4 cake pan with parchment paper.

Ingredients:

1 pouch cashew flour brownie bake mix

2 eggs

½ cup vegan buttermilk (we use Forager brand)

1 tsp. vanilla extract

1/3 cup vegan mayo (we use “follow your Heart” brand)

¼ cup black brewed coffee unsweetened at room temperature or store bought

Frosting:

½ cup powdered sugar

¼ cup unsweetened cocoa powder

4-5 Tbsps. plant base milk

Combine the powder sugar and the cocoa powder firs to get rid of the lumps

Add the milk and mix until soft and well combined.

Set aside. Add chocolate frosting to the cake is cooled.

Directions:

With an electric mixer, beat the wet ingredients.

Add the cashew brownie bake mix, and continue mixing until well combined. Do not over mix

Pour batter into the prepared cake pan and bake for 40-45 minutes or until a small knife is inserted in the middle of the cake, and comes out clean.

NOTES:

You can replace the vegan ingredients for regular dairy ones.

Let the cake cool down completely in the pan. Remove from pan and frost it.
