Delicious Savory Brunch Waffle

Savory Cooggies Brunch Waffle

 

You’ll need:

A waffle maker set on high heat

1 1/3 cups Cooggies Cashew Flour Pancake and Waffle Mix

2 eggs or 6 Tbsp Aquafaba if making it vegan (Aquafaba is the liquid that comes in canned chickpeas)

1 ½ cups milk or milk alternative

2 Tbsp oil

1 cup shredded zucchini

Directions:

If using Aquafaba, whisk it until thick consistency and lightly foamy, about 1 minute.

Mix with a fork or whisk all wet ingredients: eggs or aquafaba, milk and oil.

Add the Pancake and Waffle mix to the wet mixture and mix.

Fold in the shredded zucchini with spatula

Pour the mixture in the pre heated waffle maker filling all cavities. Approximately 1 cup of the mix.

Cook the waffle on high.

When done, top it in the following order with:

Hummus, sliced avocado, sliced radishes and arugula.

Drizzle with sea or pink salt and olive oil.
