Chocolate Chip Baked Donuts
Cooggies Gluten and Grain Free Chocolate Chip Baked Donuts
What you’ll need:
1 Nonstick Donut Pan
1 Cooggies Bare Muffin Gluten & Grain free bake mix (16oz)
1 cup yogurt or dairy alternative
2 Lg eggs
2 tsp. vanilla extract
1/3 cup oil of your preference
1 cup Chocolate chips. (Optional)
Preheat oven to 325 F
Lightly grease the doughnut pan
With an electric mixer, beat eggs oil and water. Add the Bare Muffin mix, keep mixing for about a minute. Fold in the chocolate chips using hand spatula
Fill each donut cup ¾ cup full. (Use a pastry bag or plastic bag with small corner cut out, makes it much easier to fill)
Bake 10 to 15 minutes, or until a toothpick comes out clean.
Allow to cool down
Dip donuts in the glaze when ready to serve
*If you prefer to fry them, instead of baking them, freeze them to solid
Heat oil to 375 (A temp. thermometer is very important to have, as the Temperature of the oil is extremely important.
Fry them for 2 to 3 minutes. When done, remove them with a slotted spoon allowing the excess oil to drain back to the fryer or pan. Put donuts on a plate.
Have a mixture of 1 cup of sugar and ½ tbl spoon of cinnamon ready. Roll them into this mixture, or glaze them with the gaze recipe.
1/2 cup confectioners’ sugar
¼ cup unsweetened cocoa powder
4 to 6 tbsp. milk or milk alternative
FYI. After dipping the donuts in the glaze, toasted almonds, sprinkles or other yummy toppings can be added on top of the glaze.
